Grilled Fish Tacos with Mango Salsa

We made these last night and they were excellent! Do try.

Grilled Fish Tacos with Mango Salsa

Plank-Grilled Halibut
halibut fillets
olive oil
cajun seasoning
cedar plank (can be purchased at many grocery stores in the fish section, I find them at Costco too)



Mango Salsa
1 mango, peeled, pitted and diced
1 medium tomato, seeded and diced
1/4 cup red onion, chopped
1/4 cup fresh cilantro, chopped
1/2 jalapeno pepper, minced
1 garlic clove, minced
S&P



Slaw
1/2 head green cabbage, shredded
3 T light sour cream (you could also use plain yogurt)
3 T light mayo
fresh lime juice
S&P



Directions

Soak the cedar plank in water for at least 1 hour prior to cooking fish. The longer the better...

While the board is soaking, prepare the salsa.

Heat grill to Med-High.

Rub the halibut fillet with olive oil and season one side generously with cajun spice.

Remove the plank from the water, pat dry and place on grill for 2-3 minutes (this seasons it if being used for the first time...most can be used 2 or 3 times). Turn plank over and place fish on top. Cover the grill and cook for about 15-20 minutes or until the halibut is just cooked through. *Keep a spray bottle filled with water handy so flames can be extinguished if the plank starts to burn.

While fish is cooking, prepare the slaw.

Serve fish on corn tortillas with slaw and mango salsa. I also served our tacos with avocado on the side since Ian is not a huge fan; however, I otherwise would have put it straight into the salsa. Beans and cheese make a tasty accompanyment on or to the side. Enjoy!!
